Eggplant and grated coconut with Celeriac, onion, garlic, tomatoes, tahini, chilli powder (hot), cummin, Sesame oil served with Wheatberry.
chopp the eggplant...
Let It dry (add some salt!)
Chop the Celeriac.
Put some palm oil (I know Its pure evil, but it gives a nice flavor together whit the Celeriac!)
Have some real heat on the Stove (2,5 out of 3, 5/6 electronic)
Add Chili.
Chop the Garlic.
Put the cummin and the garlic in the oil (that should be HOT!)
Add the Eggplant and grated coconut, let it fry for some time...
So that It get some nice color.
Add the Celeriac
And the tomatoes, let it fry for some minutes (the Stove still hot)
Then and the onion and tahini, lover the Sotve...
Do the Wheatberry.
when its 5 minutes left (until the Wheatberry are ready!) add the Sesame oil.
Ready to serve...
